The 40 hectares of the farm are entirely converted to organic farming and the cereals are milled in three Astrié stone mills using the traditional technique. Unlike modern milling, this ancestral technique preserves the vitamins and minerals in the grain. The grain only passes through the millstones once, so it is neither burnt nor heated.
